Zucchinis have to be one of my favourite vegetables. Not only are they nutritious and abundant this time of year but they are such a versatile veggie. They can be used and seasoned so many different ways remaining delicious.
Stuffing them is one of my favourite ways to enjoy them. They become so tender and the stuffing really amps up their flavour making them quite flavourful. My creole inspired stuffing is actually inspired by a dish my mother often made growing up. This recipe has roots and I'm sharing it with you all!

This is one of my favourite bruschetta recipes I've whipped up to date. All of the flavours play so well with one another and really help to make every bite an explosion of flavour in your mouth.
I've whipped up a super simple basil butter that sets the tone for the bruschetta's flavour. Each baguette is topped with artichokes, colourful medley tomatoes, and tangy hot pepper rings along with salty feta and creamy bocconcini cheeses. Bake everything up until nice and crispy and serve away!
It's so delicious you might want to have an extra baguette on hand!
I love pierogis! They are so delicious when prepared the traditional way but are even better when prepared like this! These little potato pillows are the perfect vessels for a cheesy casserole and bake up perfectly in under 30 minutes. I've added some broccoli for colour and flavour and blanketed everything under a layer of shredded cheddar which makes everything better!

Caprese salad is one of the simplest and most satisfying salads to make. There's something about the pairing of tomatoes and basil that just sings with every bite. Add in some tender bocconcini cheese, hearty chickpeas, and a flavourful balsamic vinaigrette, and you've got a delicious salad.
This salad can be enjoyed on its own or you can spoon the salad over a bed of your favourite lettuce for an even fresher, heartier meal.
Polenta is something I've only recently been getting involved with. I've yet to prepare it from scratch but I am looking forward to trying it. Until then, a prepared log of polenta is just fine and super easy to work with. You can find these prepared logs in most grocery stores, look for the Italian foods in the International section and you'll likely find it!
The patties are baked until lightly crisped on the outside and pillowy on the inside. Next, we'll take some buttery, roasted brussel sprouts and pour them over top the patties. It's so simple and tastes heavenly!

Here's a fun little quiz for y'all. I am all about anti aging fruits and vegetables and knowing which ones are top of their game is a great way to intentionally work more of these foods in to your diets.
Go through the list and keep a tally of how many skin saving superfoods you regularly consume. Give yourself a 1/2 point for foods you periodically eat and take score at the end. It will also enlighten you as far as which foods you should be trying to slip in to your diet a bit more. Obviously by default there will be a few meat related products you lose points on but there's a lot of great information in this article.
