This mexi salad has the right blend of spices along with corn, beans, and onions enveloped in a creamy dressing. Simple and satisfying! LASAGNE POTATOES Taking inspiration from one of my favourite dishes, my lasagne potatoes are sinfully good. Layers of thinly sliced potatoes, peppers, fresh basil, and a super quick and delicious tomato sauce all baked up under a layer of cheese. Every bite is better than the last with this dish! POLENTA PATTIES with ROASTED SPROUTS
Everything about this dish is so right. Creamy and rich polenta seasoned perfectly and baked until lightly crisped on the outside along with some buttery, roasted brussel sprouts. This dish is so simple to prepare thanks to the precooked polenta but it sure tastes like you laboured over it for hours. You guys will love this! There isn't much that needs to be said about this dish, it's extremely simple and extremely delicious. Fresh cauliflower and broccoli are tossed in an olive oil and crumb mixture and bake under the most glorious layer of cheddar cheese. I eat a lot of potatoes, especially roasted ones, so it's important to play around with flavours often to keep things interesting. This goes for any dish you find yourself eating often, switch up some of the flavours and ingredients to give your dish a new twist! Fluffy quinoa makes a great substitute for the traditional bulgur in this recipe. Lot's of fresh parsley and mint along with the simplest of lemon vinaigrettes, there's lots to love. LEMON & THYME ROASTIES As you all know, I love potatoes. This roasties recipe is similar to others I've released but the flavour combination is a bit different. The thyme and red pepper flakes give the potatoes a wonderful flavour which is taken to another level when the potatoes are tossed in lemon zest after finishing in the oven. They're so addictive you'll be looking to make a second batch before you even finish the first! QUINOA TABOULLEH
I was really reaching for the stars making this dish for a get together where kids were involved but everyone absolutely loved it. Quinoa is the perfect grain to use in salads. It holds its texture and stands up well to every flavour you can think of. This salad is loaded with fresh parsley and mint and finished with an abundance of fresh lemon juice and zest. Every bite is so fresh and delicious you guys are going to love it!
