Another Slow Cooker inspired recipe for y'all. Layers of flavour and loads of Red Lentils which means lots of fiber and protein!
This recipe started out in my mind completely different but as the cook time went on I realized I had make a mistake somewhere. Not one to be defeated, I allowed it to continue cooking and when the lentils were thoroughly cooked and tender I gave it a taste and was pleasantly surprised. SO SO SO much flavour here, I wasn't about to discard the recipe!
COUPLE TIPS. . .
* Any lentil will work in this recipe. I used Red simply because the dish had a red tone.
* Lentils are forgiving, if they overcook they're still quite edible! I've overcooked a few in my day :)
* This recipe makes quite a lot of stew and is great for leftovers the next day. It's also freezable!
