Today's polenta recipe is one that I will be making again and again because the flavour combinations were literally perfect. Keeping the polenta itself simple allows the toppings to really shine, and that's what I've done with this recipe. I sauteed some mini button mushrooms with copious amounts of butter and fresh sage for a savoury topping to the polenta that is utterly delicious. Finished with grated parmesan for extra flavour and savouriness, this dish is beautiful to present and even more beautiful to eat!

Creamy Polenta with Buttery Sage Mushrooms
Polenta is my latest obsession. I love everything about it from the texture, the colour, and the flavours, to how easy it actually is to whip up. Mushrooms are not my favourite thing, I'm a big texture guy and the mushrooms have always set me off. With that being said, for some reason I love button mushrooms to the moon and back. They're mildly flavoured and don't seem to give me that texture issue so I try to enjoy them when the timing is right. I have a deliciously creamy polenta served with mushrooms that are bathed in a buttery sage sauce that is utterly delicious. The combination of butter and sage not only enhance the mushrooms' flavour, but it also pairs quite perfectly with the flavours of the polenta. This is one dish you guys are going to want to enjoy over and over again just like me!

HAPPY VEG CHEDDAR & CORN LOAF I'm in love with this loaf recipe! Going back to a tip I gave you guys in the past, it's super easy to swap out ingredients once you have a base recipe that's perfect. My muffin / loaf recipe works every time so it's great to swap out flavours or ingredients to create a new loaf using the same recipe! This lovely loaf recipe is for a rich and cheesy corn loaf. A layer of cheddar is baked on top creating a flavourful crust while the inside is moist, fluffy, and full of fresh corn! Such an easy recipe to whip up and the corn loaf is utterly delicious any time of the day.
