A few weeks back, I prepared ravioli using zucchini instead of pasta and I absolutely loved it! That was my motivation for trying to make cannelloni, if it was even half as delicious, I had a winner on my hands. In fact, the cannelloni might have even been better!
The cannelloni are made up of thinly sliced zucchini folded around creamy ricotta cheese and marinated in pesto for additional flavour. They are baked in a delicious tomato sauce and topped with a crispy crumb mixture that adds just the right amount of crunch and texture to the dish. For every ounce of effort they take to make, they certainly make up for it in flavour.
