This story hit me very hard as it was likely the worst case of cruelty I'd heard in our small city in quite some time. Long story shirt, this beautiful puppy was left behind a Canadian Tire to die after having its legs taped together and mouth taped shut so forcefully that the poor puppy ended up with damage to its face and mouth.
This beautiful pup is being cared for / rehabilitated at the Humane Society of Windsor and is making a slow but positive recovery. There is a petition going to demand maximum punishment for the arse who did this to Justice the pup. I've attached the LINK at the top of the page. It would mean so much to me if you all could click and sign.
It is so disgusting to me the lack of appropriate punishment doled out to animal abusers. In cases such as this that are intentionally malicious and destructive, there should be mandatory jail time. Fines and animal bans just are not acceptable punishment. Animals are no different than children, they look to us to feed, bathe, love, and care for them yet when a child is harmed there is maximum penalties (deservingly) but our animal friends are valued so much less and punishment is usually reflective of this.
It's about time the laws reflect how most of us feel about animal abusers. Lock em up and leave them there!!!!
When you've combined ingredients together and found something that fits, you can take that match and apply it to all sorts of recipes. For example,I personally find basil and mozzarella cheese are the perfect pair. Think Caprese Salad, Pizza, Pasta Bakes. . . these dishes can all incorporate these two paired ingredients and taste delicious!
In this case, basil is the star. This very simple mac salad gets its flavour from a perfectly blended vinaigrette and when paired with subtle, supporting flavours like cucumber and parsley, the fresh Basily flavour really stands out!
BASILY MACARONI SALAD
** A fragrant twist on a traditional macaroni salad. Dressed in a basily, blended vinaigrette and tossed with fresh parsley, white onion, and sliced cucumber, this salad is so delicious. It's fresh and super flavourful, seconds will be inevitable.
MIXED FRUIT CRUMBLE
** Fruit crumbles are quite possibly the easiest desserts to make and eat! They tick every box when it comes to what you crave in a dessert. Sweet, Crispy, Fruity, Fresh... not to mention they require little work.
This fruit crumble pairs a variety of berries with peach and pineapple for an almost tropical flavour. I've added some coconut to the crumbly topping to play off those tropical flavours. You guys are going to love this one!
MEXI STUFFED SHELLS
**Giant, shell shaped pasta stuffed with fresh beans, onions, tomatoes, and cheese, all baked to cheesy perfection and smothered in an enchilada sauce.
Growing up, my siblings and I were always so excited for the Christmas season. Of course as children you look forward to Santa visiting but we always looked forward to my moms excessive Christmas baking. Every year she would whip up more desserts than we knew what to do with and we loved it!
Pumpkin and Banana Breads, Cakes, Raspberry Tarts. Cream Cheese Bars, Chocolate Macaroons the list really goes on and on. There was one dessert that though that we looked forward to more than any of the others, Truffles. We were able to get involved in the process of preparing them and rolling them up in our favourite toppings. This is a memory I will have forever with my mom.
I'm sharing with you this super easy recipe because I want it to inspire some holiday fun with your siblings, children, friends etc. These truffles freeze up perfectly so you can make large batches and freeze to give as gifts or to snack on at a later date.
What makes these tasty, chocolaty bites so wonderful is that there are 3 simple ingredients. Icing Sugar, Cocoa, and Butter / Margarine, that's all you need!
TRUFFLES 1/2 C Cocoa
1/2 C Butter / Margarine, softened
1 1/2 C Icing Sugar
Simply combine the ingredients in a bowl working them together with a fork (moms way) or use your hands to start the process of combining and finish with a fork (my way). Use a teaspoon to scoop the mixture to your hands, roll between palms to form a ball.
Have a station set out with your toppings. For example, this year I prepared cocoa and sea salt truffles as well as traditional truffles with sprinkles. You can roll them up in chopped walnuts, salty peanuts, icing sugar, cocoa, sprinkles, and so much more. Simply roll the truffles through the topping and transfer to a parchment lined tray to cool in fridge at least 1 hour.
Place them in mini muffin slips and set them out on the table for all to enjoy.
**NOTE I've made truffles with both butter / margarine in the past and prefer the butter as it makes a denser, richer truffle.
When you taste one, you will see that simplicity in a dessert can still be heavenly.
I hope you add them to your Holiday menu for next year and really have fun with them! I know it's one tradition I'll carry on for my mother for years to come!
There aren't many dishes that really scream "hearty winter food" quite like Chili and Pasta. Hearty and satisfying, you can't go wrong. You especially can't go wrong when you combine those two things and bake them under cheese!
This recipe was something I quickly whipped up and actually served in individual baking dishes versus one large dish. It's a simple and flavourful dish to prepare and the Ditali Pasta is so dense and hearty, it really works perfectly with chili!
You can really use any kind of pasta with this dish and it will be perfect! Whip it up the next time you are stuck inside on a cold evening and I know you'll fall in love!
What's most delicious about this soup is the broth. The flavours all married so well together and the warming effect of the chili flakes was so wonderful! I was looking through the cupboards, then the fridge, then the freezer, then the cupboards again when it hit me. I had one of my recently suggested "Pantry Must Haves" on hand, Low Sodium Stock. A few ingredients later and voila! Soup!
This soup saved my dinner as I was on the verge of having absolutely nothing anywhere. A much needed trip to the grocery store / fruit market was at least a day away and things weren't looking good.That's what's great about always having some basics on hand. Stock, Canned Beans, Frozen Corn etc

Loading a potato is a great way to spice up an already rocking snack or side. It is important though to be minimal with your fatty toppings to keep the potato on the healthy side. In some cases, I've seen them buried underneath sour cream, melted cheese, chili etc but this takes away the nutritional value of the dish and replaces it with fat and calories.

Pasta Bakes are a go to dinner in the winter time for me. Easy to prepare and baked up to perfection, it's so satisfying of a meal during the cooler months. Not to mention the added heat in the house ;)
