First, I'll be sharing with you the most delicious, slow cooked vegetable stew that is so warm and confronting, I know you all are going to love it. Loads of spices and herbs and hearty vegetables, it's so delicious! Stews and soups are also great to freeze and use later so make a double batch if you're slow cooker can handle it!
Next, I`ll be whipping up some beautiful Eggplant Parmigiana sandwiches. Scratch made tomato sauce, melty mozzarella cheese, and crispy fried eggplant nestled between the perfect bun. I loved this one so much I ended up having two! I hope you guys love it as much as I did! HAPPY VEG

Stuffing anything inside of pasta shells usually ends up being delicious and this dish is no exception. It all started with having an abundance of beans and my brain sort of took off from there. Each shell is stuffed with cheddar and a spicy bean mixture made up of Romano & Black Beans, fresh jalapeno,garlic, and tomatoes and drizzled with the most perfect, flavourful enchilada sauce imaginable. I had no idea how easy it was to make enchilada sauce from scratch, trust me when I say eff the canned stuff and make it from scratch. Stuffing the shells is definitely the most labour intensive part of this dish but it`s actually a great way to get friends or family involved in the process. Bake them up to perfection and serve with some beautiful cilantro or parsley and some smooth, creamy avocado for a delectable dinner! When winter comes, fresh fruit comes at a premium. Is it really a significant price jump? Not necessarily, but depending on where you live, winter doesn't see a lot of locally produced vegetables and fruits. Frozen produce is harvested and frozen at it's peak making it a great substitute for fresh during the winter. One thing to keep in mind when using frozen fruit / veg is the water content. Frozen produce tends to let out a little more water when cooking so make sure to monitor this when cooking! I decided to take advantage of some frozen fruit I had on hand and prepared another tasty Crumble recipe. The addition of coconut paired with the Pineapple gives the dish a little tropical feel.
