I wanted to share with you all what this weeks recipes were and why I chose them.
#1 - Beans and Veenies
** This is a dish that in my opinion, everyone has had at least once in their lifetime. Growing up, this was one of my mother's favourite dishes. Her affinity for hot dogs was a well known fact in our household. I've decided to VEG her favourite dish and prepare it using only vegetarian friendly ingredients. A classic dish and simple to prepare.
#2 - Mexischetta
**This appetizer is a very simple play on a traditional Bruschetta. The fun thing about this particular recipe will be that adding or removing ingredients to suit your own tastes will still keep the end result tasting great. Simple to make and great for gatherings or even to start your Mexican feast!
#3 - Zucchini, Pepper, and fresh Basil Pizza
** This recipe was actually inspired by a combination of toppings similar to this that I topped a customizable pizza with when ordering a while back. The combination of toppings with creamy ricotta and mozzarella cheeses is fabulous and each topping works well with one another. Scratch made dough and sauce, you'll definitely be looking for seconds!
