Poblano peppers are quite mild and perfect for stuffing. I have stuffed peppers with everything from seasoned rice to a bean medley and they always turn out fantastic. Peppers are the perfect vessels for so many different fillings.
This time around I've stuffed them with a perfectly seasoned batch of potatoes and melted a layer of delicious cheese on top. I also topped them with my CORN SALSA which I shared with y'all early last week.
