Growing up, my mother was a wonderful cook. (She was an even better baker!) Between myself, my brother and sister, and my father, there was rarely leftovers!
There were a handful of dishes she prepared that have stuck with me for all of these years.
After losing my mother earlier this year I decided to take a look through her recipe box and try to find some of those classic recipes. Luckily, I found this one which was definitely a knockout!
I Vegged the recipe and it came out FLAWLESSLY! My first taste brought back so many childhood memories. So cheesy and flavourful, not to mention the perfectly golden brown crust.
