There were so many flavours in every bite and they all worked so very well together. Creamy ricotta gets a flavourful friend in pesto which really pops against the polenta and roasted corn. The polenta itself is lightly crisped on the outside and soft and delicious on the inside. The corn plays up the flavour of the polenta and brings everything together.
