Frozen hashbrowns were a staple of mine growing up, they're crispy and delicious. Recently I visited one of my very best friends and she had some hashbrown casserole leftovers in her fridge from a recent family get together. Intrigued, she offered me a bowl and I excitedly chowed down. It was so delicious and creamy, I knew I was going to try and make something similar in the future.
My cheesy, jalapeno hashbrown casserole is an ode to that delicious casserole I had at Kyle's that day. It's cheesy, loaded with fresh vegetables, and just the right amount of jalapeno heat. All these flavours pair so nicely with a few slices of avocado, sour cream, and the perfect hot sauce!
