As I mentioned earlier in the week, the Burrito Bowls are comprised of a rice layer, bean layer, and cold topping layer. I've already shared the beans with you and now I have the CILANTRO & LIME RICE recipe posted!
Head to RECIPES for more! I've also shared a post under the PERSONAL BLOG page, check it out if you're interested. :) HAPPY VEG I recently prepared a Cilantro & Lime Rice to use when I prepared my burrito bowls, (That recipes still coming!) and after cooking and seasoning the rice, I was left a bit disappointed. My rice was delicious, nice and fluffy and perfectly cooked but I was really missing my two "star" contributing flavours, the cilantro and the lime. I knew I had added enough of both ingredients to really pack a punch but I was missing it. SO, I decided to investigate if it was my liquid that was affecting these delicate flavours and as it turns out, I learned something new that I would love to share with you all!
So, keep this in mind when preparing to cook your rice. If your dish is lightly seasoned or the flavours are milder, use water to cook the rice. If you are making a heavily seasoned dish like creole, mexican rice etc, use vegetable stock for additional flavour.
HAPPY VEG
First off, I'll be sharing the recipe for Lime and Chili Pintos which would be one of the hot portions of this dish, Super simple and just the right amount of spice, these beans are the perfect side dish. Loaded with flavour and don't forget packed with protein!
Head on over to the RECIPES TAB for the recipe and make sure to add it to your favourites! Part 2 of the Burrito Bowls will be later in the week! HAPPY VEG I've got a few things going on here! I've included a new segment titled ANIMAL WINS. This page will feature articles and news stories I find on the internet highlighting animal victories! It's important to share these stories with you all and we can even use the blog to discuss news stories and chat about animal rights! Make sure to visit! www.happyveggie.weebly.com/animal-wins I have also posted my Cheesy Avocado Ranch Potato Salad recipe so look for it under the RECIPES tab!
HAPPY VEG Make sure to head over to the RECIPES tab for this recipe! I learned Bechamel for the very first time during my stint in the Hospitality Management Program in college. It is so velvety and rich, you could smother dirt in the stuff and it would still be delicious! I used the JOY OF COOKINGS recipe for Bechamel but you can find a billion recipes for it online! I simply stuck with a recipe I had tested in the past and knew would be great!
