Poblano peppers are quite mild and perfect for stuffing. I have stuffed peppers with everything from seasoned rice to a bean medley and they always turn out fantastic. Peppers are the perfect vessels for so many different fillings. This time around I've stuffed them with a perfectly seasoned batch of potatoes and melted a layer of delicious cheese on top. HEEEEEY EVERYONE!!
It's been a long 5 days without my computer. In case you haven't been following my Facebook / Twitter, I recently encountered an extremely malicious virus that had the potential to steal my identity and even go so far as to put illegal photos and documents on my hard drive. I am very happy to announce that my computer is finally virus free and I'm back! I owe you guys my recipe from Friday which I will share with you all tomorrow along with my new menu for the week. In this case I've blended up some creamy avocado along with fresh basil for a pop of flavour. This hummus is flavourful, fresh, and delicious. HAPPY VEG I fell in love with these Fajitos after the very first bite. Tangy and smoky chickpeas, tender caulifower, and a perfectly seasoned saute of veggies rolled up in a tortilla and slapped on the grill. There is not a darned thing about these not to love. What's a FAJITO you ask? A fajito is a blend of both a burrito and a fajita. Shaped and stuffed like a delicious burrito with a fresh saute of peppers and onions like a fajita.
