There are going to be some changes to the blog in the next weeks & months so I wanted to let you guys know what I was planning!
For starters, I'll be adding a new page having to do with my trip to Ireland where I'll be sharing everything I encounter with all of you. I'll be sharing the foods I eat, the places I visit, the selfies I take, and the people I meet, and I couldn't be more excited / nervous! With all of the free time I'll have, expect lots of photos and posts! I'll also be adding a VIDEOS page attached to my soon to be utilized YOUTUBE account. I'll be discussing the top animal news stories from the week and offer my opinions and commentary. I'm excited to connect on a more personal level! I'm also excited that you'll be able to see and hear my passion regarding animals and their well being. I'll be sure to let y'all know when the first video comes out! I'll be removing the VEGGIE TRIP ACROSS ONTARIO page. With my 2 year trip to Ireland approaching, I won't be able to continue making these trips. I will definitely be continuing this opportunity to showcase the many wonderful vegetarian, vegan, and health conscious spots across Ontario when I return! Lastly, I'm looking to revamp the blog's appearance. I want more pictures and pizazz. You'll see the changes as they happen! Stay tuned and have a great week everyone! HAPPY VEG

SPRING FRESH QUINOA & BLACK EYED PEA SALAD This salad boasts a fabulous amount of protein and a fresh, delicious flavour. Veggies like onions and peppers along with black eyed peas, fresh herbs, and a simple, lemony vinaigrette that is subtle, fresh, and light. Perfectly cooked quinoa is a thing of beauty so keep your eyes on the pot and stick to the package directions! :) POLENTA with PESTO RICOTTA & ROASTED CORN
There were so many wonderful flavours in every bite, I couldn't stop enjoying them. Pesto is a perfect partner for ricotta as the cheese tends to be a bit bland and once combined, they make the perfect marriage. The flavourful cheese is then smeared across crispy, roasted polenta rounds and topped with delicious roasted corn and fresh basil.
Let it be known, there is no cuisine that excites me more than Mexican. I love everything about the cuisine; the spices and flavours, the beans and rices, and the many varieties of hot sauces and salsas. There's just so much to love! Cinco is technically a Mexican holiday but other countries including the United States have also taken the date as culturally important. They celebrate the relationship between their two countries and the Mexican - American culture as a whole. Parties, parades, and most importantly, delicious food are all commonplace as part of the celebration. As I intend to head out with a girlfriend and grab some delicious food and several Mojitos, I figured I'd share with you all some of my favourite mexican inspired recipes from the past! I've done quite a few Mexican / Tex-Mex dishes in the past that would be great for a Cinco celebration at home! Let's take a look!
Soup has to be one of my favourite meals. Although soup lends itself well to cooler temperatures, I can personally enjoy soup year round. It's light enough to be the perfect meal for lunch and it can certainly be hearty enough to be enjoyed for dinner as well. It also happens to be one of the easiest dishes to prepare with no clear direction. Everything virtually tastes good in a soup so it's definitely a safe dish! Here in Windsor Ontario, the cooler temperatures are lingering for a bit longer so it's the perfect time to revisit some of my favourite soup recipes!
