HAPPY VEG I drew inspiration from one of my favourite dips for this dish. I love the flavour combination of spinach and artichokes and I also absolutely love how artichoke and red pepper taste together. It is dressed in a creamy sauce and baked until perfect. Everything in this pasta works so well together for an overall delicious dish.

HAPPY VEG Frozen hashbrowns were a staple of mine growing up, they're crispy and delicious. Recently I visited one of my very best friends and she had some hashbrown casserole leftovers in her fridge from a recent family get together. Intrigued, she offered me a bowl and I excitedly chowed down. It was so delicious and creamy, I knew I was going to try and make something similar in the future. My cheesy, jalapeno hashbrown casserole is an ode to that delicious casserole I had at Kyle's that day. It's cheesy, loaded with fresh vegetables, and just the right amount of jalapeno heat. All these flavours pair so nicely with a few slices of avocado, sour cream, and the perfect hot sauce! Head on over to the RECIPES tab for this simple, flavourful dish! I know I've said this before but reiterating is my thing, stuffing ANYTHING results in something quite glorious. In this case, plump, juicy Roma tomatoes are the vessel and they are stuffed with a luscious, cheesy white bean puree. After baking, the tomatoes become so tender and delicious and the filling forms a nice crust on top. This dish is simple and honestly, fabulous! Springtime and Asparagus go hand in hand. When asparagus comes into season I am ready to enjoy it everyday. I absolutely love asparagus and I love playing around with spices and flavours to really jazz the asparagus up. Frankly, asparagus tastes great with just salt and butter but if you want to enjoy it as often as I do, it's great to try it new ways.
