One thing that is important when preparing bread salads especially in this case where we've added fresh lettuce is that it is best eaten immediately upon dressing. The bread will soak up a lot of the dressing which initially is good but after sitting in the fridge overnight the salad tends to be quite dry. Also, the delicate lettuce will be awfully soggy if left overnight so try and enjoy the salad quickly.

HAPPY VEG This recipe actually started as an experiment. I was pleasantly surprised at how delicious these "tarts" turned out. Everything from the sweet and delicious filling to the shell made of chipped potatoes was spot on. I will definitely be using chipped potatoes to make tart shells again in the future!
