The different tones of green from the celery leaves and parsley really look beautiful against a white bowl. Head on over to the RECIPES tab :)
HAPPY VEG

Having a theme when you set out to create a meal makes shopping so much easier. Themed meals can revolve around similar ingredients or even a style of cuisine that sets the tone for the menu and ambiance of the meal. I've got 3 fun themed menus coming up and I am already in the kitchen working things out!
HAPPY VEG It`s hard to go wrong when stuffing something and baking it under a layer of glorious cheese. Stuffer Mushrooms are larger versions of white button mushrooms that are perfect for stuffing. Removing their stems leaves quite a nice crater waiting to be filled with the perfect stuffing. In this case that stuffing is some fresh peppers, onions, veggie ground, and rice. Button mushrooms are pretty flavourless in comparison to other mushroom varieties so they can be paired with all sorts of flavours and still taste fabulous. You will likely have extra rice after stuffing the mushrooms which is a great way to make this in to a main course. Pair a side of rice with the mushrooms and you've got a great meal. The rice is loaded with protein and vegetables making it a great side dish! HAPPY VEG
1. Stuffing ANYTHING usually results in something delectable and these mushrooms are no exception. My Beef(less) Stuffed Mushrooms are tender, cheesy, and so delicious. Beefless ground cooked up with peppers and onions, stuffed into delicious stuffer mushrooms and baked under a gooey layer of cheddar cheese. They're delicious!
2. My Red Potato Salad hits all the right notes. Creamy dressing, tender potatoes, and a delicious, herby flavour. I've made sure to use my celery leaves again for extra flavour and colour. 3. Finishing up the week will be my Rustic Stew. What makes it "Rustic"? Big, hearty chunks of vegetables! No fuss with this dish! Quickly chop up those veggies and drop them in the slow cooker for a fuss free and delicious dish. Nice and rich with enormous, tender vegetables, this stew will leave everyone's stomachs satisfied. HAPPY VEG I loved everything about this dish. Curry is one of my favourite flavours and surprisingly I've never tried making it at home. It's super easy and really quite delicious. What I think stands out to me most about this dish is the beautiful colour of it. Such a gorgeous, vibrant colour to match the fabulous flavours!
Coconut milk is often used in curries as well but I am not personally a fan of coconut milk so I decided on whipping cream. Substitute away if you have coconut milk on hand! There are so many variations of curry out there that it's hard to really screw up the flavours. There are many varieties of curry powders on the market but here are some of the flavours you may find in your spice blend.
It's really quite easy to whip up your own curry powder at home but buying it pre-mixed is great as well! I hope y'all enjoy it as much as I did! HAPPY VEG
Creamy dips like this one are crowd pleasers. It's a great dish to set out at a gathering and watch as everyone dips their little hearts out.
Magic happens when corn and jalapeno get together. The two flavours really compliment one another. The sweetness of the corn really plays well with the spice of the jalapeno for a delicious bite every time. And really, smother anything in cheese and you're golden! Head on over to the recipes tab for the recipe! Baked potatoes are nutritious, delicious, and simple to prepare. I've come up with a couple great ways of adding extra flavour to your baked potatoes without adding extra fat! Baking the potatoes with these ingredients really amps up their flavour without adding an extreme amount of fat. When the potatoes come out, scrape away the cooked herbs and what you're left with is flavour!
