SPINACH & BASIL GNUDI
Now that I've mastered the art of the gnudi, it's easy enough to play around with the flavours and ingredients. For this recipe, I've incorporated fresh spinach and basil into the gnudi mixture to amp up the green factor. These little ricotta dumplings are then tossed in a simple sauce of butter & EVOO, pepper flakes, and whipping cream. They're fluffy little pillows of deliciousness and I can't wait for you guys to enjoy them! We all know already that potatoes are my favourite food. Scalloped potatoes specifically, are one of my absolute favourite side dishes. There's just something about perfectly cooked potatoes, draped in a velvety, creamy sauce, that ignites my hunger just thinking about them. Today's potato salad recipe is special because it's my first time trying out a green goddess recipe I wrote. Green goddess dressing gets its name from its lovely green colour, which can be any hue of green ranging from emerald to pastel. Containing avocados, the dressing also incorporates fresh parsley, fresh chives, lime juice, garlic, and more. The resulting dressing is thick, flavourful, and gorgeous, ready to envelop a bowl of tender mini potatoes.
