Anyone who has had the pleasure of enjoying the Yves Spicy Sausages knows that they are nothing short of fantastic. So flavourful with hints of spice. I personally love them fried on all four sides in some olive oil and served on a crusty roll with a tiny bit of shaved red onions and mustard.
This time however I thought it would be a great time to try something a little different. I whipped up a quick broccoli slaw with only a few simple ingredients and decided instead of having it on the side...I'd have it on top :P
QUICK BROCCOLI SLAW
340g package shredded Broccoli, Carrot, Red Cabbage mix
21/2 Tbsp Olive Oil Mayo
1/2 a Lime's Juice
1/2 English Cucumber, quartered lengthwise and diced
1/2 Red Onion, sliced
1/2 C Fresh Parsley
Sea Salt, Pepper, Dried Parsley
Combine all ingredients in a large mixing bowl. Salt and Pepper to your own tastes.
Slice an Italian Roll in half and place the fried sausage inside. Top with Spring Mix Lettuce and and a heaping scoop of the Broccoli Slaw.
