As you all know by now, I absolutely love Indian style curry! Everything about curry gets me so excited, starting with the aromatic spices and flavours right down to the beautiful colour of the dish. It's such an inviting dish, it triggers instant hunger when you catch a smell of a delicious batch of curry bubbling away on the stovetop.
Today's curry is vegan and starts with the sauteing of veggies in fragrant coconut oil. I melt everytime I smell coconut oil heating up in a pan, it's such a delicious smell that always ignites my hunger. A collection of spices including garlic, coriander, and cumin are added along with chickpeas and green peas for an especially delicious and hearty batch of curry.

GOAT'S CHEESE CAPRESE w PESTO VINAIGRETTE
Caprese salad is truly a classic and one I enjoy eating quite regularly. The simplicity of the salad is what makes it so special and enjoyable to eat. I decided to prepare it with a little twist this time around and I think the results speak for themselves.
My Goat's Cheese Caprese is equally as simple and delicious but I've decided to feature creamy, tangy goat's cheese as the main focus of the salad. Delicious and fresh zima grape tomatoes, fresh basil, and a delectable pesto vinaigrette to bring everything together. When you take a piece of tomato and run it through the goat's cheese and pesto, it's a magical bite of food that you won't soon forget.
CHICKPEA & GREEN PEA CURRY
There's something so incredibly inviting about curry to me. The smell is so enticing and hunger inducing while the vibrancy of the dish is also quite pleasing to the eyes. I love everything about curry and I especially love that you can pretty much add whatever you want to it and it will still be delicious.
I've got a simple curry dish to share this week that's 100% vegan and totally delicious. Creamy thanks to coconut milk and fragrant thanks to spices like coriander, curry, and turmeric, it's a winning dish that's so easy to prepare. Enjoy it on its own or over a bed of your favourite grain for a heartier meal.

CAULIFLOWER & GRAPE TOMATO SALAD with PESTO LEMON VINAIGRETTE
Once again, I've whipped out the pesto. It's got so much wonderful flavour that it is the perfect base for a vinaigrette along with some EVOO and lemon. Very simple and a great way to flavour up all of these fresh and delicious vegetables.
Cauliflower, tomatoes, pepper, onion, and bocconcini cheese come together for a hearty and fresh salad that takes little time to make and even less time to eat!
