Garlicky Green Beans. There really isn't much I love more than fresh Green beans sauteed with olive oil, garlic, and shallots. A delicious side for many main courses. Quick Basil & Parmesan Tortellini. I say quick because they are fresh noodles from the grocer and cook extremely quickly. Simply boiled and combined with a light oil, shallot, and basil combination, this quick Tortellini will be delicious with the Roasted Tomatoes, no? HAPPY VEG

These recipes were part of one delicious meal that I know you'll all love! Very simply, the only things you need aside from the beans and slaw are 2 packages of GARDEIN FISHLESS FILETS and an 8 pack of flour Tortillas. When we purchased the mix for the salad, it came with separate packages of Chipotle Ranch Dressing and Crispy Tortilla strips. These will come in handy here! 1. Depending on how many mouths you have to feed, prepare fishless filets according to package directions. (1 Filet per taco. 4 Tacos leaves enough for the slaw / beans to become side dish as well. 8 tacos and there's just enough slaw for all of them). 2. Assemble tacos with a drizzle of the Chipotle Ranch dressing, 1 fishless filet cut into 3 pieces, a good tong-full of the Citrusy Slaw, and a Tbsp. of the beans. Sprinkle the crispy tortilla strips over the taco and enjoy! This delicious and simple meal if timed right, takes only 35 minutes to cook. One of my biggest flaws with cooking is definitely timing. I can never seem to get the timing down when preparing a meal. Friends of mine have told me I should film myself and upload to youtube and although I would love to do that, I need to work on my organization and timing! She must have put some magic into it because every one I've had since has not the same. I've decided to add some fresh Cranberries to the mix because I love the sour tartiness they bring to the dish. Apples and cranberries are both fall fruits meaning they are in their peak during this time. You'll likely find that prices for apples are lowing at the Supermarket and you can find fresh cranberries more readily. These two fruits make the perfect sweet and sour combination and anything buried beneath a crispy, buttery topping is sure to be tasty! I had the pleasure of entertaining my sister and her family yesterday and let's just say, the pan might as well of been licked clean!
