I've been in the kitchen working on perfecting the next few recipes so I wanted to share with you all where I am headed.
1. Corn and Black Bean Salad.
* Fresh corn sliced from the cob and mixed with rich black beans, green onions and cilantro. Finished with red pepper flakes and fresh lime juice and zest.
2. Mexican Inspired Lasagne
*Layer upon layer of cheesy goodness with loads of red & green onion, tomatoes, beans, and spicy meatless ground.
3. Ricotta Stuffed Grape Tomatoes
*A fragrant mixture of herbs whipped into creamy ricotta cheese and stuffed gently inside juicy grape tomatoes for a delicious snack!
Ok, I have to admit something to you all that I am quite embarrassed out.
Recently I had seen "EVOO" bottles and was quite confused. What the heck were they?
Then I stumbled across a recipe that listed EVOO and I made the connection. . . Extra Virgin Olive Oil. I can not believe I couldn't put two and two together on that one. Growing up, I short formed and made abbreviations out of everything and THIS I couldn't figure out.

I love bell peppers and you should too! They are so delicious and really enhance a variety of dishes.
However, they are also great stuffed with a variety of ingredients and baked to perfection!
This dish was inspired by my love of peppers but also as I had an abundance of pasta on hand and thought this was a match made in heaven. This dish is fairly economical as bulk pasta is pretty inexpensive and with only a few flavour enhancing ingredients, you've got a great dish!
