I absolutely love visiting with Kyle, we have such a long history together it's still so wonderful to visit with her. One of my absolute favourite things about visiting Kyle? She loves to cook! I won't ever scoff at a free meal but when the meal is fresh and delicious that's a bonus!
This is such a delicious variation of Bruschetta! In this recipe I've utilized the oil that the artichokes are packed in for additional flavour and reinforcement of the artichoke flavour. Subtle notes of roasted garlic and basil round out the flavour profile of the dish. This appetizer is gorgeous and as simple as tossing everything together and baking up some toasts! I used store bought roasted garlic that is already roasted and packed in oil and salt and it is available usually in the fresh section of the grocer although you may find it on the shelves. Keep an eye out, it's a quick way to add a whallop of sweet and deep garlic flavour.
HERB OIL MIX
I wanted to share this little blend here with you all here prior to sharing up and coming recipes that will call for this mixture. It's bright green and gorgeous, super fragrant and flavourful, and versatile. You can mix it into soups and sauces for an additional layer of flavour, spread it on baguettes and bake it in the oven for a wonderful side to a tomatoey pasta dish, or toss potatoes in the mixture and bake them up for a delicious roasted potato!
