Gnudi are so fun to make and taste fantastic. Depending on how you sauce them really takes them from lunch to dinner. This version is quite light and great with a nice side salad.
Fresh basil and garlic are pureed and added to olive oil and butter to create a perfectly blended sauce to coat the Gnudi.
This dish is fun because you can really add your own twist on it and make it different every time. I finished mine with a dash of hot sauce and lime wedge but you could add jalapenos, green onion, or sour cream and really switch it up! Very hearty. Very Cheesy. Very Amazing!
There is something about potato salad that just screams spring and summer! Maybe because it's one of the best companions to an outdoor barbecue! Whatever the reason, potato salad has long been on of my go to salads when it comes to needing a quick and flavourful side. Potato salad can be made so many ways with so many different ingredients it really is wonderful!
This particular recipe is great because it really utilizes some of the most common spring time vegetables you'll likely have in the fridge!
