The only difference will be vibrancy in colour. Fresh herbs obviously will make for a greener pesto but basil goes dark quickly when handled which is why the jarred pesto won't look as vibrant. This is in no way an indicator of the freshness of the product.
When shopping for Pesto it's best to look in the international section of your grocer to get the best, authentic tasting pesto straight from Italy. Fresh is always best but this jarred, ready made go to is great to have on hand! HAPPY VEG
